Try Tuna tonight

Here are some recipes courtesy of the local distributors of Brunswick canned products.

Tuna Puffs

ingredients

2 cans Brunswick Tuna, drained

1 tbsp fresh lime juice

1 medium potato, boiled and crushed

1 pimento pepper, seeded and chopped

2 tbsp chopped chives

3 tbsp chopped cilantro

2 tbsp chopped parsley

2 cloves garlic, minced

2 tsp pepper sauce

1 egg white, lightly beaten

1/2 cup breadcrumbs

salt to taste

for dredgingand frying

1 egg yolk, lightly beaten with 2 tbsp water

1 cup flour

vegetable oil

Method

1. In a large mixing bowl, pace Brunswick Tuna, lime juice and potato.

2. Stir in, pepper, herbs, garlic and pepper sauce. Combine well.

3. Add egg white and enough breadcrumbs to hold mixture together.

4. Preheat oil in a frying pan or wok. Form mixture into one-inch balls, dip in egg yolk mixture, then dredge with flour.

5. Fry until golden brown, drain and serve hot with cocktail dipping sauce. Make 20 puffs.

Jerked Tuna in Spicy Tomato Sauce

ingredients

2 cans Brunswick Tuna, drained

1 tsp lime juice

2 tbsp vegetable oil

1 large onion, sliced

1 tbsp jerk seasoning paste

1/2 cup tomato sauce

2 tbsp fresh French thyme

2 tbsp chopped fresh chives

salt

Method

1. Sprinkle lime juice on Brunswick Tuna.

2. Heat oil in a medium size sauté pan. Add onion and sauté for 2 to 3 minutes.

3. Add jerk seasoning and sauté for another minute. Add Brunswick Tuna and stir in tomato sauce. Cook until bubbly.

4. Add thyme and chives, cover and simmer for about 5 minutes. Serve with dumplings (spinners) or rice. Serves 4.

Tuna Accras

ingredients

2 cans Brunswick Tuna, drained

1 clove garlic, minced

1/2 tsp salt

1 tsp freshly ground black pepper

1 hot pepper, seeded and chopped

1/2 cup chopped chives

2 onions, finely chopped

1/3 cup chopped cilantro

2 tsp lime juice

1/2 cup flour

1 tsp baking powder

1/4 to 1/2 cup water

vegetable oil to fry

Method

1. Combine Brunswick Tuna with garlic, salt, black pepper, hot pepper, chives, onion, cilantro and lime juice.

2. Add flour and baking powder. Add just enough water to make a soft batter like dough. Heat oil in frying pan.

3. Drop dough in hot oil by spoonfuls and fry until golden brown and puffed.

4. Serve with green mango chutney.

Makes 20 small Accras.



Tuna and Cassava Fry

ingredients

2 cans Brunswick Tuna, drained

1 lb cassava, peeled and boiled, inner vein removed

2 tbsp olive oil

4 cloves garlic, chopped

2 onions, sliced

2 pimento peppers, seeded and chopped

1 hot pepper, chopped

1 red or green bell pepper, seeded and cut into julienne

2 tbsp chopped parsley

1 tsp lime juice

Method

1. Cut cassava into one-inch strips. Heat oil in a frying pan.

2. Sauté garlic and onion until onions are browned at the edges.

3. Add peppers, cook for a few minutes. Add Brunswick Tuna and cassava, and continue cooking until cassava is slightly golden at the edges.

4. Sprinkle with parsley and lime juice. You may drizzle additional olive oil before serving.

Serves 4.

Blood pressure

My best cure in the kitchen is garlic. A clove of garlic daily helps control blood pressure (monitoring is necessary). For asthma, consumption of the juice from garlic helps clear mucus from the chest.
