Jerked, smoked loin of pork marinated in beer, stuffed with rum-soaked rasins and prunes, glazed with guava, encrusted with ginger in a light jerk sauce.

Pumpkin bisque with sherry and chives.

Grilled filet of wild salmon drizzled with teriyaki and herbs in a lime sauce.

Braised lamb shank with oven-roasted potatoes, olives and vegetables in a red wine sauce.
